We brewed this hoping that our people would face shochu making with even greater sincerity, and that the spirit of the makers would reach the drinker through the product itself. It is a bottling to raise a glass to while picturing the landscapes of Amami Oshima.

Made Entirely In-House, from the Raw Materials Up
From growing the sugarcane through to refining the brown sugar, and from clearing a rice field that had lain fallow for twenty years through to growing, threshing and milling the rice for the koji, our brewers did all of it themselves. Every stage, from making the raw materials to finishing the product, was carried out in-house by our own people.
One Bottling, Woven from Old Methods and New
We adopted a new brewing method, mujoshi-jikomi, in which the brown sugar itself goes straight into the tank to ferment and distill, rather than a brown sugar solution. It succeeded in drawing out the full, generous aroma of brown sugar and a deeper flavor besides. The brewing is by the new method, the distillation by traditional atmospheric distillation. Combining old and new gives an exquisite balance of the body, savory depth and aroma that only brown sugar can bring.
A Singular Brown Sugar Shochu, Made with Our People of One Mind
A brown sugar shochu made from the raw materials up by brewers of one mind, using a new approach that reworks our brewing from the ground up. We named it Isshin, from the words isshin (to renew), hitotsu (one) and kokoro (heart). Isshin is a bottling that returns to the origins of brown sugar shochu. Take your time with its natural sweetness and savory depth, and picture the landscapes of Amami Oshima as you do.
