  • Full-Bodied Yet Clean: The Savory Character of Black Koji

    We brew with black koji, long handed down in Ryukyu and southern Kyushu. Highly active in enzymes, it gives the moromi mash a natural sweetness and body. Sato no Akebono made with black koji carries a rich aroma and depth of flavor, yet finishes clean and crisp on the palate.

  • Vacuum Distillation, the Innovation Behind the Brand

    Vacuum distillation is, without exaggeration, the technique that defines Sato no Akebono. Distilling the moromi in a reduced-pressure still produces a fresh, light mouthfeel free of any harshness. Shochu making is, from beginning to end, work with living things such as koji and yeast. Our craftsmen keep their senses sharp, watching over the condition of the koji and the mash at every stage.

  • A Black Koji Label with Real Presence

    As with Long-Aged Sato no Akebono, the label carries the Tatsugo pattern, a traditional figure of Oshima Tsumugi, here rendered in the darker, more sombre tones that suit black koji. The restrained design brings out the dignity that only black koji brewing can give.
